GRILLED LOBSTER

GRILLED LOBSTER

INGREDIENTS:

  • 2 Lobsters (1 lb or more)

    For the caper butter:

  • 6 tablespoons unsalted butter

  • 2 tablespoons drained capers

  • 1 clove garlic, peeled and thinly sliced

  • 2 tablespoons chopped chives, tarragon, and/or basil

  • Coarse sea salt and freshly ground black pepper

  • Melt all ingredients together

INSTRUCTIONS:

  1. Split the lobster on the belly end.

  2. Pre-Heat grill to medium heat

  3. Place the lobster on the grill split side down. Grill approximately 3 minutes.

  4. Turn over the lobsters

  5. Spoon in Caper butter into the split cavity and continue grilling until done.

  6. Do not over cook.

  7. Serve on a platter with Caper butter
